er, chocolate nib, actually. The dough tasted surprisingly authentic- no joke! I think it was the brown sugar-tasting dates, combined with the vanilla bean and chocolate flavours.

So, I threw these together and dehydrated them overnight, and did I write down the measurements so I could make them again? Of course not. I think it went something like this, though:

    1 cup raw walnuts
    1/4 cup raw cacao nibs
    a few Tbsp coconut flour
    seeds from 1 vanilla bean
    maybe…3/4 c fresh dates

I made a paste with the dates ( I think I added a few drops of water, bringing it somewhere between paste & syrup), took it out of the processor and cleaned it out. I then ground up the nibs, then added the walnuts and ground them up together as fine as I could get them. Threw in some coconut flour & the vanilla bean seeds. Added the pureed dates. squished balls of dough with a fork on parchment in my old dehydrator, and left overnight.

I contemplated simply rolling the dough into balls & covering in coconut- the dough was addictive. I think they’re good either way, though.
